Ingredients

Marinade:
1/2 cup Extra Light Olive Oil
1/4 cup Onion, chopped
3 tbsp Lemon Juice
1 tbsp Fresh or dried Parsley
1 clove Garlic, minced
1/2 tsp Salt
1/2 tsp Marjoram, dried
1/8 tsp Black Pepper
2 lbs boneless pork, trimmed, cut into 1" cubes
Directions
1. In a resealable plastic bag or shallow glass container, combine the marinade ingredients
2. Add pork and toss to coat.
3. Seal or cover, and refrigerate overnight (or minimally a few hours).
4. Drain pork and discard marinade.
5. Thread pork on skewers, leaving a small space between the pieces.
6. Grill, uncovered, over medium coals for 8-10 minutes or until the meat is no longer pink, turning frequently.
7. Serve in pita bread with sauce.
