1 med. sweet potato, peeled and cubed
1med. granny smith apple, peeled, cored and cubed
1 pinch cayenne pepper
1 pinch cumin
1 pinch cinnamon
salt
1/4 tspn liquid smoke (optional)
2 tspns canola oil
Directions
Pre heat oven to 350 degrees
Toss diced sweet potatoes in an oven proof sauce pan with 2 tspns canola oil, agave syrup, cumin, cinnamon and salt and pepper.
Roast in oven until potatoes are fork tender, about 10 minutes. Add the apples to mixture and return to oven for about 10 minutes. At that point, if you choose, sprinkle liquid smoke over mixture and return to oven for 5 more minutes. Makes two servings.
