Ingredients

2/3 cup boiling water
1 4 oz. package of sugar free low calorie jello, any flavor
1 cup Weight Watchers yogurt (or 1% cottage cheese)
8 oz. fat free cream cheese
2 cups fat free whipped topping
Directions
Yield: 4 very generous servings.
Bring water to a boil, measure out 2/3 cup.
In a small bowl, stir boiling water into gelatin at least 2 minutes until gelatin is completely dissolved. Cool 5 minutes.
Pour into food processor. Add cheese/yogurt (add cream cheese in large chunks); cover. Process until well blended, about 2-3 minutes.
Pour into pretty bowl. Add whipped topping (reserving one dollop) and gently blend until well mixed. Wipe top edge of bowl clean, if needed. Put dollop of whipped topping on top to decorate.
Cover with plastic wrap. Refrigerate until set, about 4 hours.
VARIATIONS:
1. Pour into graham cracker crust, if desired. Be sure to add this to your nutritional values.
2. Use 1% cottage cheese instead of yogurt.
3. Vary the flavor by using various flavors of jello, e.g., lemon, cherry, raspberry, orange, etc.
4. Key Lime flavor:
a, Use lime jello and 8 oz low cal key lime yogurt. OR
b. Decrease the boiling water, make up volume by adding key lime juice.
5. Pumpkin Pie Cheesecarke: Add canned pumpkin instead of yogurt plus 1/2 t. ground cinnamon, 1/4 t. ground nutmet, and 1/4 t. ground allspice.
6. Add low sugar preserves or jams, e.g., strawberries, orange marmalade, grape, etc. Be sure to add these to nutritional count. OR use preserves as topping.
