Ingredients

8 Southern Home Arrowtooth Flounder Fillets (approx. 4 oz. ea.)
1 pack Schooner Imitation Crab Meat, chopped
3/4 cup whole wheat bread crumbs
1 medium onion, chopped
1 medium carrot, shredded
1 medium celery stalk, chopped
1 cup fresh spinach, chopped
1/3 cup fat free skim milk
1.5 tbs. extra virgin olive oil
1.5 tsp. Old Bay Seasoning or to taste
Directions
Preheat oven to 350 degrees.
Pour olive oil into skillet, add onion and celery. Saute on medium heat until tender. Add carrots, spinach, and crab meat. Sprinkle in Old Bay Seasoning. Add breadcrumbs and skim milk. Stir until the mixture is combined and sticks together (like stuffing).
Line baking pan with foil and spray lightly with cooking spray.
Place even piles of stuffing on each fillet. Bake for 20-30 min. or until fish is cooked through (it should start flaking).
