I like this, it is a higher calorie option I use for lunches. Makes 2 servings. Ingredients

    NearEast Couscous - Roasted Garlic & Olive Oil - 1 pkg
    Bush's Garbanzo Beans - 1 can
    DelMonte Diced Tomatoes - Basic, Garlic & Oregano (No Salt Added) - 1 can
    Reese Artichoke Hearts (8-10 small size) - drained - 1 can
    Garlic Powder
    Lemon Juice

Directions

Prepare NearEast Couscous as directed on package. Rinse garbanzos and place in a large bowl (two 1/2 cup servings - save the rest of the can for soup!). Measure out two 1/2 cup servings of tomatoes, add to bowl (and save the rest for another meal). Drain can of Artichoke Hearts, quarter, and add to bowl. Add 1.75 TBSP (more to taste) of lemon juice to bowl, and sprinkle over garlic powder (to taste). When couscous is finished, fluff with fork, then measure two servings into bowl (setting aside the remaining .75 cup for another meal). Mix ingredients together, sprinkle with cracked black pepper and enjoy! Some days I add a bit of feta to this (very good).
