Ingredients

    1 pkg Whole wheat pasta - I used Hodgson Mill Veggie Rotini
    3 tbsp olive oil
    3 tbsp red wine vinegar (or balsamic depending on your taste)
    5 cloves of garlic chopped - or add to taste
    1/2 large yellow onion
    1 large pealed and chopped cucumber
    2 medium chopped tomatoes
    1 chopped bell pepper - I use yellow/red/orange
    1 tsp dried oregano
    1 cup shaved or shredded parmesan (optional)
