A delicious cold salad for hot summer days. A delicious cold salad for hot summer days.
Number of Servings: 8

Ingredients

    2 cups cooked couscous
    1/4 cup of cooked spinach, finely minced
    1/4 cup shredded carrots
    1/3 cup dried cranberries
    3 Tbsp minced fresh chives
    2 Tbsps minced fresh parsley
    1/4 cup chopped green peppers
    1/4 cup crumbled feta cheese

    For dressing:

    1/2 tsp sugar
    2 tsps dijon mustard
    4 Tbsp olive oil
    4 Tbsps red wine vinegar

Directions

Toss salad ingredients together.

Shake dressing ingredients together in a jar and pour over salad. Toss lightly to combine and moisten couscous blend. Either serve room temperature or chilled.
