Introduction
Frittata made with mostly egg whites, lots of veggies and a little bit of sausage. Balance well with a whole wheat english muffin or my lightened up sweet potato biscuits. Ingredients

1 T. Olive Oil
10 extra large egg whites
2 whole eggs
1/2 cup diced onions
1/2 cup diced red peppers
1 (10 oz.) package of frozen spinach, thawed and drained
1/3 pound your favorite fresh pork sausage
1/4 cup shredded cheddar cheese
8 oz. sliced mushrooms
Directions
Preheat oven to 400 degrees.
In a large round non-stick skillet cook and crumble sausage. Remove sausage from pan and drain on paper towels. Wipe the oil out of the pan. Next, cook onions, peppers, and mushrooms on medium high heat until tender. Break up spinach and add to pan along with sausage that has already been cooked. Turn off the heat. Beat eggs and egg whites until light and frothy. Pour into pan and top with the cheese. Bake in 400 degree oven for 20 minutes.
Cut frittata into 6 equal serving pieces and enjoy.
