Ingredients

    Ingredients:
    Corn Tortillas, 8 tortilla, medium (approx 6" dia)
    Cilantro, dried, 8 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Yogurt, plain, low fat, 1 cup (8 fl oz)
    *Cumin seed, 2 tbsp
    *Lemon Juice, 2 fl oz
    Cabbage, napa, 4 cup
    peach pineapple salsa medium Safeway select, 2 tbsp Ground beef, extra lean, 8 oz
    chili powder 1TBS
    I raw potato medium diced
    mrs. dash lemon pepper, 1 serving

Directions

In a skillet combine grnd beef, finely chopped potato, onion, garlic, cumin(camino), chili powder, mrs. dash and cilantro.
Simmer above ingredients on a lower heat after grnd beef is fully cooked.
On a separate skillet lightly cook and turn white or yellow corn torillas on med heat till lightly golden brown in oil or steam..lower heat to keep warm.
While grnd beef is browning: chop cabbage and fresh cilantro, mix in separate bowl with 2 tbls of lemon or lime juice, toss and set aside. Mix yogurt in a cup with a pinch of cumin and set aside to serve buffet style:)
Place tacos in holder and fill with meat mixture, adding in sequential order: cabbage- cilantro- lemon juice mixture, yogurt mixture, then 2 Tbls of peach pineapple salsa or homemade salsa of your choice on top:)
Lemon water is a great addition with this meal!
