Introduction

This recipe does not include the shell or extras like sour cream and cheese, but I usually add a little bit of both to mine and use whole wheat wraps! Ingredients

    One eggplant, cubed and salted
    2 ripe tomatoes, cubed
    1 and 1/4 c mushroom, sliced
    1 onion, sliced (about one cup)
    1 c firm tofu
    1 tbsp EV Olive Oil
    1 clove garlic, diced
    1 tsp oregano
    dash red pepper
    salt and pepper to taste

Directions

Heat oil in skillet over medium heat and add garlic. Add onion and cook for a few minutes until starts to turn brown. Add mushroom and spices, cook for one minute. Add eggplant, cover and on medium low heat let sit for 10 minutes, stirring once at 5 minutes. Uncover and add tomatoes and tofu and heat through. Makes approx. 4 - 1c. servings.
