Introduction

Number of Servings: 6

Ingredients

    3/4 c all-purpose flour
    3/4 c whole wheat flour
    1/2 c brown sugar
    3/4 c quick cooking oats
    1 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1 c fresh blueberries
    1/2 chopped pecans
    1 very ripe banana, mashed
    1 cup soymilk
    1 T lemon juice
    1 egg
    1 T vegetable oil
    1 1/2 tsp vanilla extract

Directions

1. Preheat oven to 350 degrees. Grease 6 cup (big ones) muffin pan.
2. In large bowl stir together dry ingredients. Gently stir in blueberries and pecans. In a seperate bowl, combine remaining ingredients. Pour wet ingredients into dry and mix just until blended. Will be lumpy. Spoon into muffin cups all the way to the top.
3. Bake 20 minutes in the preheated oven (16 minutes for regular muffins), or until the tops of the muffins spring back when lightly touched.

Makes 6 big muffins or 12 regular sized muffins.
