Ingredients

Dry ingredients:
2 cups Whole Wheat Flour
1/2 tsp salt
1/2 tsp baking soda
1 tsp backing powder
Wet ingredients:
3 bananas liquified
1 large egg
1/2 cup honey
1/2 cup light tasting olive oil
1 tsp vanilla extract
Add-ins:
1 banana chopped
1/2 cup walnuts chopped
Directions
Makes 12 regular size muffins.
1. Preheat the oven to 375F.
2. Measure and mix all dry ingredients into a large bowl.
3. In a separate bowl, beat the egg and set aside.
4. In yet another bowl, mash up 3 bananas until they are mostly liquid.
5. Add the beaten egg, honey, olive oil, and vanilla extract to the banana liquid and mix well.
6. Pour the wet ingredients into the dry ingredients and mix with a spatula until all of the flour has been hydrated with liquid but still lumpy.
7. Quickly fold in the add-ins.
8. Spray the muffin pan with oil if needed and fill with the mixture.
9. Bake for 18-20 mins. Muffins are done when they are golden brown, and a toothpick inserted in the center comes out clean.
10. Carefully, dump muffins on to a kitchen towel and allow 15-20 mins to cool before eating.
