Ingredients

1 16oz can of kidney beans
1 can Diced Tomatoes
1 Yellow Onion diced
2 tbsp butter or olive oil
2oz Ginger root finely chopped
1 tsp black pepper
1 tsp salt
3 cloves garlic
Directions
Drain Tomatoes
Chop Onions
Finely chop garlic cloves
finely chop ginger
Drain Beans reserving about 2 tbsp of liquid from can.
In saucepan, melt butter and saute garlic for 1-2 minutes
add ginger and saute for 1 more minute
Add onions and saute until limp 5-7 minutes
Add beans and 2 tbsp liquid from can
Cover and simmer for 20 minutes.
Remove cover and continue to cook on medium heat until all liquid evaporates stirring occasionally.
Remove from heat and stir in tomatoes.
Serve wrapped in lettuce leaves, over rice, in pita or tortilla.
