Ingredients
-
2 Chicken Breast, bone and skin removed
1 Fuji Apple (3-1/4" dia) (approx 2 per lb)
1/2 cup Grapes, seedless
3 tbsp Kraft Mayo Light Mayonnaise
6 tbsp Coleslaw Dressing
Juice of 1 Lemon
6 Thomas Sahara 100% Whole Wheat Wraps
Directions
Cut up and boil chicken breasts. While that is cooking, cut the apple into 1/2 inch pieces, cut grapes in half, then roll lemon on table using your hand, and soften it up, this releases more of the juice than just cutting it and squeezing. Ok so, once softened, cut ONE END off so you can see the 'fruit/flesh" of the lemon, and then squeeze the juice into a non-metal bowl.
When chicken is cooked, strain it. Cut the pieces about 1/2 inch to 1 inch. Put chicken in large bowl, add apple, add grapes, add lemon juice. Stir well. Add Mayonnaise and Coleslaw dressing. Stir well. Taste. Add salt and pepper to taste.
Take a wrap, place a lettuce leaf on it, scoop about 1/2 cup of chicken salad onto leaf, fold 2 sides across from each other IN, then roll wrap up. Refrigerate til ready to use/eat.
You can pre-make these and have them as a fast lunch. I loved it!
Enjoy.
Makes 6 wraps. Eat for lunch, a fast snack or a small supper.
