Introduction

Serve with Honey-Peanut Butter Syrup (recipe entered separately): Combine 1 cup of honey with 1/2 cup creamy peanut butter. Serve with Honey-Peanut Butter Syrup (recipe entered separately): Combine 1 cup of honey with 1/2 cup creamy peanut butter.

Ingredients

    3 egg whites
    1-1/2 cups whole wheat flour
    1/2 cup all purpose white flour
    2 cups low-fat buttermilk
    1 tbsp sugar
    3 tbsp vegetable oil
    2 teaspoons baking powder
    1/4 teaspoon salt

Directions

1. Heat waffle maker. If necessary, brush with vegetable oil before batter for each waffle is added (or spray before heating). In medium bowl, beat egg whites until foamy. Beat in remaining ingredients just until smooth.

2. Pour about 1/2 cup of batter onto each side of belgian waffle maker (or onto center of waffle standard waffle maker). Close lid of waffle maker.

3. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter.

Makes 7 waffles (1/2 cup of batter makes 1 waffle).
