Introduction

Tasty cabbage salad with dried fruit, no mayo. Tasty cabbage salad with dried fruit, no mayo.
Number of Servings: 6

Ingredients

    Half a head of shredded cabbage
    1 grated carrot
    1/4 cup raisins
    2 Tablespoons dried cranberries
    1/4 cup snow peas (about 10) cut into pieces
    1 tbsp. balsamic vinegar
    1 tbsp cider vinegar
    2 tablespoons brown sugar
    1 oz. orange juice (about 2 tablespoons)
    1 chopped scallion
    1 tablespoon olive oil

Directions

Shred or chop cabbage, grate carrot, cut up scallion and snow peas.
In a measuring cup, mix brown sugar, vinegar, raisins, cranberries, olive oil and orange juice to soften the dried fruits for a few minutes.
Pour over the cabbage mixture and stir. Add salt and pepper to taste.
Serves 6

    Very Good
    I'm never sure about how much "half a head" of cabbage should be. I used a whole small head which came to about 6 cups shredded fine. There was enough of the dressing to coat it well. A very tasty and satisfying salad! - 7/10/10
