Introduction

This rice has a lot of flavor. To make Mexican rice omit the green bell peppers & tomato sauce. Add 1/4 cup more of diced pettite canned tomatoes. Ingredients

    Rice 1 c
    canola oi. 1 tbsp
    Broth chicken [sodium free] 2 cups
    salt 1 tsp
    Garlic 1 1/4 tsp
    Cumin 1 1/4 tsp
    Black pepper 1/8 tsp
    green bell pepper minced 1 1/2 Tble
    Diced Canned tomatoes 1/2 cup
    Tomato Sauce 1/4 cup

Directions

Mince green peppers to measure 1.5 tablespoon

Step 1 Brown rice till golden
Step 2 add broth
[ note if the broth has sodium omit1 tsp salt ]
Step 3 add the rest of the ingredients. Bring to a boil,
cover, than simmer for 20 minutes.
Makes 4 1-cup servings
