Introduction

This recipe is for fresh homemade bread, from scratch, including grinding your own wheat. I actually use white wheat because it has a flavor my family prefers. Also a bosch mixer is the best for the mixing and kneading. This recipe is for fresh homemade bread, from scratch, including grinding your own wheat. Ingredients

    5c Warm Water
    1T Yeast
    1/2 C oil
    3/4 c honey
    Mix
    Grind 5 c wheat
    Add flour and Mix 3 minutes, then-add
    2 T salt
    2 T dough enhancer
    2 T gluten
    Grind 3 c wheat
    Add flour and Mix 10 minutes


Directions

Mix yeast and water, add honey and oil, also 2 T lecithin if desired (good for heart). Grind 5c wheat, add, mix for 3 minutes. Let rise 20-30 min. Grind 3 c wheat, add to mixture with salt, dough enhancer, and gluten. Mix 10 Min. let rise 8 minutes. Punch down, portion into 5 loaves and place in greased pans. Let rise to desired size (Note: if it rises too much it will deflate when you put it in the oven and not be 'pretty'.) I let it rise about 20-30 minutes. Bake 350 for 30 minutes. Remove from oven and rub tops of loaves with butter to prevent cracking.
