Introduction
Pork chops in a light tomato sauce with lima beans. I found this recipe in a diabetic cook book and tweaked down to make a nice recipe for two.Serve with brown rice or whole grain pasta. Ingredients

2 4oz Boneless center cut pork chops, trimmed of fat
1/2C Chopped onion
1 Med carrot, peeled and thinly sliced
1/4 tsp Minced garlic, or to taste
1 1/4C Diced tomatoes, no salt added, with juice
1/2 tsp Light Brown sugar
Dash of pepper, to taste
3/4C Frozen baby lima beans, partially thawed
Directions
This recipe makes two servings. 1 Serving = 1 chop & 1 Cup of vegetable mixture.
1. In large non stick skillet, coated with cooking spray, brown the pork chops for 5 mins on each side. Place the chops on a platter and set aside.
2. Sauté the onion in the skillet until tender but not brown, about 5 mins. Add carrot & garlic and sauté for about 3 more mins. Add he tomatoes, sugar and pepper. Return the pork chops to the skillet.
3. Bring to a boil, then reduce heat to low, cover & simmer for 20 mins. Stir in the lima beans pushing them down into the liquid. Simmer, uncovered, until he pork chops are tender, about 15 more mins or until the meat and vegetables are tender and cooked to your liking.
