Ingredients

    10 ounces frozen spinach, thawed and drained slightly, then zapped for 3-4 minutes on high - cut open box and allow to cool.
    5 large eggs
    1/2 cup organic coconut milk
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/2 tsp. fresh grated nutmeg
    5 ounces swiss, diced.

Directions

In a large bowl, whisk the eggs. Whisk in the coconut milk, salt and pepper & nutmeg. Add the spinach and stir well. Stir in the swiss cheese. Pour everything into a parchment paper-lined 10-inch pie plate or round 8" cake pan. Bake at 400º 30 minutes or until set and lightly browned. Let stand 10 minutes before serving.

Makes 8 slices - each between 3-4 ounces each
Can be frozen

I think this would also be good with different cheeses such as cheddar, pecorino romano, &/or mozzarella.

    This recipe is delicious. I added 1/8tsp of cayenne to mine. I might add more next time because I like things spicy. - 9/12/10

    This was very tasty. I was doubtful about the coconut milk, but added it anyway. It gave the quiche a great flavor, it tasted rich, but NOT like there was coconut in my eggs. My husband liked this, too, we'll definitely make it again. - 6/9/10
