Introduction

This is a quick and easy personal pizza recipe you can use for lunch or dinner and can be adapted endlessly.

I vary this basic recipe by adding a variety of my favorite veggies and/or leftover (chopped) meats or seafood.

Got leftover marinara? Use this recipe on pizza night to make traditional style pizzas. TIP: Give kids the ingredients in small containers and let them make their own personal pizzas.

Ingredients

    1 Whole Wheat Tortilla (LaTortilla Low Carb is only 50 cal/7g fiber)
    2 TBS Pizza Hummus (Tribe or your fav flavor)
    1/2 cup Spinach (wilted or steamed in microwave)
    1 TSP Mrs Dash Italian Seasoning
    1/8 TSP Sea Salt (to taste, optional)
    1/8 TSP Black Pepper (to taste, optional)
    2 oz Feta Cheese crumbles

Directions

Makes 1 Serving per tortilla.

Preheat oven to 400 degrees.

Spray a pan with cooking spray, heat the spinach just until the spinach is wilted. Season the spinach to taste.

Use a spoon to spread the pizza hummus over the tortilla.

Add the spinach. Sprinkle on the spices and cheese.

Bake just until tortilla edges are browned about 5-10 minutes.

Grilled Squash (green, yellow)
Onions
Garlic
Bacon Bits (only 25 cal per TBS)
Turkey Pepperoni (slice 5 into slivers and enjoy a taste in every bite)
Shrimp

Mozzarella
Blue Cheese
