Introduction

This is my version of Spanish Rice. I took tips from a few recipes and came up with this. It comes to 3 points per one cup serving. Ingredients

    3 Tbsp of EVOO
    3 oz of ham
    1 oz of Spanish Chorizo (not the Mexican fresh kind)
    3 Tbsp of Sofrito
    1 packets of Sazon
    1 tbsp of Tomato Paste
    1 15.5 oz Can of Goya Pink beans
    2 cups of rice (rinse it first)
    3 cups of water

Directions

Heat the EVOO in a large pot. Dice ham and Chorizo and add to oil. Cook for a few minutes. Add Sofrito, Sazon and Tomato paste. Cook for about a minute. Add the Pink beans. Then add the rice, cook for about 2 minutes and then add 3 cups of water. Cook on high unit water is evaporated. Fluff with fork and then create a pile in the center of pan of rice and turn flame to low and place a lid on top and let cook further for about 10 to 20 minutes. Gage on how you like your rice. I like mine a little on the wet side and not to dry so I did it for about 10 minutes. Fluff again and serve
