This recipe is a vegetarian/vegan version of a dish I used to prepare with ground turkey. It can be used as a taco or burrito filling or served over your favorite grain like brown rice or quinoa. Ingredients

    3 pk ground veggie crumbles
    2 can black beans
    1 can sweet corn
    2 chopped raw onions (red or yellow)
    2 tbsp sun dried tomato
    2 tbsp taco seasoning
    1 tbsp minced garlic
    2 tbsp extra virgin olive oil

Directions

Heat ground veggie crumbles in olive oil for 5 minutes. Add in black beans, corn, onions, sun dried tomato, garlic, and taco seasoning and simmer 10 minutes.

Serve on tortillas and top with fresh mango salsa and veggie cheese for a sweet tangy delight.

Makes approximately 16 4-oz servings
