Ingredients

Three cups medium grain brown rice.
Two cans (10 oz cans) Rotel Tomatoes with green Chiles, regular or hot
One "can" (8 ounces) Organic chicken stock
One teaspoon each of Garlic Powder and Comino or Ground Cumin seed

Directions

Makes approximately 8 single cup servings of rice.

Use your rice cooker's measuring cup, and measure three cupfuls of rice. Rinse as per your cooker's specifications. Add the cans of Rotel and the broth adding any water needed to reach the prescribed water level for this amount of rice. Add the spices. Stir. Set your machine per the cooker's instructions and wait. I put 90 minutes cooking time, but that varies from machine to machine. Once the machine indicates the rice is done stir well to integrate the tomatoes that tend to float to the top. Enjoy!
