Introduction

IT's easy anyway, but this one omits the alcohol...yogurt cheese is all my lactose intolerant fiance tolerates, so I used it here. Feel free to use any other cheese--and it is really good with grated romano & parmesan. Ingredients

    1 medium sweet onion
    1 T olive oil
    1 T Balade light butter
    4 C beef broth
    2 C water
    4 slices sourdough bread toasted
    4 slices cheese

Directions

1. Slice onions. Add oil & butter to 6 quart pan. Heat on medium-high. Add onions, and a dash of kosher salt. Cook about 10 minutes or until onions are golden brown.
2. Add beef broth, I use Trader Joe's Organic Beef Broth. Add water. Cook til boiling, about 10 minutes.
3. Cover a cookie sheet with foil (to make clean up easier). Ladle soup into oven safe cups and place on cookie sheet. Top with toasted bread, then with cheese. (A little cooking spray around the top of the cup keeps the cheese from baking on.) Cook in preheated oven at 425 degrees F, for about 8-10 minutes, or until cheese is bubbly.
4. Let cool
