Ingredients

    white beans
    kale
    onions
    carrots
    olive oil
    salt
    pepper
    vegetable broth
    parsley

Directions

layer beans in large stock pot, cover with half onion, cut in slices, broken apart, 1 tsp salt, 5 cups salt, bring to boil, turn down and let simmer 30 minutes
turn off, let sit 30 minutes
strain
put olive oil in stock pot, add rest of onion, chopped, chopped carrot, parsley, saute 10 minutes
add 2 cups broth, 1 cup water from strained onion and beans
add strained beans and onion, salt, water
take 1 cup out, puree in blender, add back in and mix in
blanch kale
add kale, simmer another 10 minutes
