Introduction

Even my kids will eat this spinach. Even my kids will eat this spinach.
Number of Servings: 1

Ingredients

    2 tbls of olive (or just enough to coat the pan)
    2 lbs of fresh pre-washed baby spinach leaves
    1/2 C onion or shallets
    2 cloves of garlic
    4 strips of tukey bacon
    1-2 tbls of honey or sugar substitute of choice
    1-2 tbls of favorite hot sauce

Directions

Very finely chop onion & garlic. Dice turkey bacon into small 1"x1/8" strips. In a very large skillet add the olive oil and heat to medium. Sweat the onions and garlic till the onions looks clear (about 5 mins), be careful not to burn the onion and garlic it will change the flavor. Once onions are clear add the turkey bacon, saute for about 2 mins. Add 1/2 the spinach, let wilt for 2 mins, flip and add the remaining spinach, flip again. Continue to turn the spinach until all looks wilted. Add hot sauce and honey. YUUUMMMMM!!!!!

    Incredible!
    Made this as writen, except I omitted the oil and used the fat from the bacon to saute the onions and garlic. Delicious! - 3/17/11
