    6 oz uncooked penne (apx 2c); 2t olive oil (or safflower oil)2t chop garlic; chop broccoli;med zucchini chop;bell pepper any color;mushrooms;tomato,italian seasoning

Directions

cook pasta according to directions; cook veg in skillet in oil; until starting to soften; Mix ingredients together & serve hot or chilled Makes 4 serv appx 1 3/4c
