Ingredients

muffins:
2 very ripe mashed bananas
1 Cup whole-wheat flour
1 Cup oatmeal
1 Cup soymilk
.5 cup unsweetened applesauce
.5 Cup unpacked brown sugar
1 Tbs flaxseed + 3 Tbs water (it's an egg replacer)
1 tsp baking powder
.5 tsp baking soda
*cinnamon
*allspice
topping:
.5 Cup walnut pieces
6 tsp unpacked brown sugar
Directions
Soak the oatmeal in the soymilk for about 15 mins.
Meanwhile, mash up your 'nanners, and stir in the brown sugar. Mix the dry ingrediants (except the soaking oatmeal and the flaxseed) all together. I never measure spices so I don't know how much to tell you to put in, you can decide what tastes good to you. I stir the flaxseed and water together in a little cup before I use it for egg replacing and so it really becomes a wet ingrediant. Mix all your wet stuff together in a big bowl and slowly stir in the dry stuff. Mix well. Line a muffin pan with 12 paper muffin cups and spray them with cooking spray. Spoon in the batter evenly amongst them. Top with walnuts and brown sugar. Bake at 375 for about 18-20 minutes. Aren't they delicious??
