Introduction
I first had this at a cub scout potluck dinner. My son who is the world's pickiest eater just loved it, so I asked for the recipe. I made a few substitutions for lower fat ingredients and he can't tell the difference. I make this almost monthly now! I first had this at a cub scout potluck dinner. Ingredients

1/2 cup egg beaters
1-8oz. box Jiffy Corn Muffin Mix
1-8oz. can Creamed Corn
1-8oz. can Whole Corn (drained)
1 Cup Non-fat Sour Cream
1/4 cup Melted Butter
Directions
Mix all ingredients together in large bowl with a spoon
Spray a 2qt. baking dish with non-stick spray and pour mixture in. Bake at 350 for 35 minutes, do Not cover. Sides and top should be lightly browned and tester should come out clean.
