Introduction

I love rice pudding and for years attempted to reproduce the rice pudding I enjoyed when I was younger. Then I met my wonderful mother in law who on one Sunday afternoon served up that bowl of luciousness. After Mom stopped cooking it was my joy to take over the rice pudding recipe. My first attempt is filled with fat - 13.4g in a one cup serving, versus this new low fat version with only 1.3g of fat.
Give it a try, you'll love it.
It makes a lot and is a great addition to a family meal or any special occasion.

Ingredients

    4 cp. fat free half & half
    4 cp. nonfat milk
    1 cp. water
    1 cp long grain rice (uncooked)
    1/4 cp. Splenda/Sugar Blend
    pinch of salt
    1 cp. egg beaters
    1 cp. Splenda/Sugar Blend
    1/4 tsp. nutmeg

Directions

Combine the first six ingredients in a large saucepan and heat to a "bubble" boil stirring constantly.

Reduce heat and simmer for 28 minutes exactly - that's how Fannie did it and it works every time.

Stir occasionally, while combining the remaining ingredients - 1 cp splenda/sugar blend and 1 cp of egg beaters in a large glass bowl - it must be glass!

Pour one ladel of the cooked rice mixture to the egg beaters and sugar blend to warm up the egg beaters.
Add the remaining rice mixture to the large bowl and stir well.

Place glass bowl on counter uncovered for 30 mins. Sprinkle nutmeg over rice pudding, cover and place in refrigerator for at least 2 hours.

I don't do raisins but for you raisin lovers you can add them as you like.

    I made this for friend who loves rice pudding and they absolutely loved it. I did add raisins and it turned out wonderful! Thanks for the lowfat recipe! My friend was amazed to find it be lowfat and still taste sooooo good! So thanks for submitting this awesome recipe. - 6/29/10
