Ingredients

2, 16oz cans Cannellini Beans, drained and rinsed
1, 28-oz can diced tomatoes (do not drain)
3 scallions, chopped
Salt-free herb and spice blend (Mrs. Dash)
Pepper, to taste
2 tbsp fresh parsley or cilantro, minced, plus more to garnish
Directions
Place half the beans and all other ingredients in a food processor. Blend until smooth.
In a pot (if serving hot) or serving bowl (if serving cold), combine the bean-tomato puree with the remaining beans. If it's a little thick, add a little water or vegetable broth until it's the desired consistency.
If you want the soup warm, heat it on medium until just barely simmering.
Serve with a sprinkle of extra fresh herbs and more pepper, if desired.
Makes 6, 1.5 cup servings.
