Ingredients

2 tsp olive oil, preferably extra virgin
1 large onion, chopped
3 cloves garlic, minced
2 tsp sugar
1/2 lb. fresh mushrooms, sliced
1.5 lb. lean ground beef
1 cup canned tomato sauce
1/2 cup dried bread crumbs
2 egg whites, lightly beaten
1 tsp dried basil
1 tsp kosher salt
1/4 tsp black pepper (or to taste)
Directions
Makes 4 servings.
Preheat oven to 350.
Heat 1 tsp olive oil in a large skillet over medium heat. Add chopped onion, garlic, and sugar, and cook, stirring occasionally, until golden, about 10 minutes. Put onion mixture in a large bowl.
Heat the other 1 tsp oil in the skillet over medium heat. Add sliced mushrooms and cook until browned, about 6-7 minutes. Add mushrooms to onion mixture. Allow to cool for 5 minutes or so.
To the mushrooms and onions, add ground beef, 1/2 cup tomato sauce, breadcrumbs, egg whites, basil, salt, and pepper. Mix well.
Put mixture onto a baking sheet that has been sprayed with pan spray. Form into a loaf. Top the loaf with the remaining 1/2 cup of tomato sauce. Place in oven and bake 45-55 minutes. Allow to stand for about 10 minutes before slicing.
