Introduction

Found this in a cookbook but was really high in sodium and calories so I tweaked it. Still pretty high for sodium but only 1/2 what it was and 1/3 of the fat. Ingredients

    2 lbs diced potatoes skin on (any variety I prefer red)
    ½ cup ham diced
    8 slices lower sodium turkey bacon crumbled
    1 bell pepper (sweet red)
    1 ¼ cup raw green onion chopped (set aside ¼ cup for topping)
    1 can cheddar cheese soup
    ¼ soup can fat free milk
    1 cup fat free sour cream

Directions

Directions: Preheat oven to 375°.

Spray casserole dish with nonstick cooking spray. Arrange potatoes in dish. Bake 10-15 mins: until brown.

Mix milk and soup together.

Layer ½: onions, ham, bacon, bell pepper and soup. Repeat.

Bake 20 mins. Cut into 8 pieces top with 2 tbsp sour cream and remaining onions then serve.
