Introduction

This salad is super crunchy and fresh yet satisfying and nutritional! This salad is super crunchy and fresh yet satisfying and nutritional!
Number of Servings: 6

Ingredients

    1 can of garbanzo beans
    1 small can, or 1/2 cup pitted and sliced black olives
    1/2 cup of crumbled feta cheese
    2 tbsp regular mayo
    3 medium cucumbers w/peel, cut in small pieces
    1 roma tomato, cut in small pieces
    1/2 red bell pepper, cut in pieces
    1/2 red onion chopped
    3 medium celery stalks chopped
    lemon juice to taste
    salt to taste.

Directions

Just combine all the ingredients and serve!

  • I didn't use the celery and added an additional kalamata olive. substituded the mayo for light mayo- thought about just using balsalmic vinegrette next time. I also used reduced fat feta and it was yummy! I served this with low sodium tomato soup and had a great lunch! - 1/21/12
