Ingredients

    3 eggs
    1 cup brown sugar
    1 cup sugar
    1 cup applesauce, unsweetened
    1 tablespoon vanilla extract
    2 cups zucchini, shredded
    2 cups flour
    1 tablespoon cinnamon
    2 teaspoons baking soda
    1/2 teaspoon baking powder
    1 teaspoon salt

Directions

Preheat oven to 350 degrees. Grease and flour 2 loaf pans. Beat eggs in a mixing bowl until foamy. Add sugar, applesauce and vanilla. Beat until thick and lemon-colored. In a separate bowl, sift flour, cinnamon, baking soda, baking powder and salt together. Add zucchini to flour mixture. Gradually add flour-zucchini mixture to eggs-sugar mixture. Spoon into greased and floured loaf pans. Bake for 1 hour. Let rest for 5 minutes. Remove loaves to a wire rack to cool completely.

Makes 2 loaves or 32 1/2 inch pieces.

    Incredible!
    GREAT recipe! Definitely the best zucchini bread I have ever made. Instead of loaves I baked mini muffins (15min). Two of the muffins comes to about the same nutritional value as 1 serving of this recipe. Very moist and light. Yum! - 7/20/11
