Number of Servings: 12

Ingredients

    3 cups sweet potatoes, cooked and mashed
    1 cup of sugar (You can use Splenda; nutrional facts will probably change)
    2 eggs
    1/2 cup Fat Free Evaporated Milk
    1 tsp Vanilla
    pinch of salt
    1/3 cup butter (I used Olivio Margarine with Olive Oil)

    For the Topping:
    1/3 Cup Whole Wheat Flour
    1 Cup Brown Sugar
    1 Cup Flaked Coconut
    1 Cup Pecans Chopped
    1/3 Cup Butter (I used Olivio again)

Directions

Combine all above ingredients until smooth. Pour into 2 quart casserole dish. Mix all topping ingredients and spread over sweet potatoe mixture.

Bake at 350 degrees for 35 to 40 minutes.

Makes roughly 12 servings 1 cup (or a little less) servings.
