Turkey breast meat, 24 ounce(s) (remove)
*poblano pepper (1 pepper), 2 serving (remove)
Onions, raw, 1 cup, chopped (remove)
Garlic, 3 clove (remove)
*Diced tomatoes & Green Chillis Rotel, 10oz can 2.5 serv in can, 1 serving (remove)
*Old El Paso Refried Beans - Vegetarian, 1.5 cup (remove)
Sargento Reduced Fat Mexican Cheese (2 oz), 6 oz (remove)
Cumin, ground chipotle powder, salt and pepper and splash of lime juice
Directions
Cut turkey breast into cubes, bring stockpot to boil then add turkey meat. Boil meat for 18 minutes. Remove from water and chill. As meat is chilling, saute the onion and garlic in olive oil. Shred the turkey meat then add to the onion and garlic. Add spices, canned tomato and lime juice and simmer until most of the liquid is gone.
line casserole dish with fresh chopped poblanos, then add the turkey mixture on top. Spread refried beans on top, then cover with cheese. Bake at 350 for 30 minutes.
