Introduction

I use whatever veggies I have in the fridge for this recipe. It's really easy & great for brunch. You can also sub non-fat milk for the 1/2 & 1/2 to reduce the fat content. Ingredients

    12 eggs
    1/2 cup half & half
    4 cups spinach
    3-4 cloves garlic
    red & yellow bell peppers
    green onions
    red onion
    jalepeno pepper
    parsley or cilantro


Directions

put spinach in 8 x 12 glass cooking pan (you can spray pan with non-stick spray if you like)
chop all veggies & toss on top of spinach
mix eggs, cream together, pour over veggies
top with cheeses
bake @ 350 for approx 50-60 minutes or til firm

makes 8 servings 3"x4"
