Introduction
This was originally a recipe from a Company's Coming cookbook that I altered. I used ww flour instead of white, reduced the oil from 1/3 to 1/4 cup, and ommited the salt. I also omited the sugar and added an apple and banana to help sweeten the muffins. I also added pumpkin and carrot for moisture and texture. Ingredients

1 cup whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. pumpkin pie or apple pie spice or cinnamon
1/2 cup raisins
1 cup buttermilk, sour milk, or regular milk
1/4 cup cooking oil
1 egg
1 apple, peeled, cored and shredded
1 medium carrot, peeled and shredded
1/2 cup canned pumpkin
1 overripe banana, mashed
Directions
In a bowl, combine flour, baking powder, baking soda, spice, and raisins. Make a well in center and set aside. In another bowl, mix the bran and milk. Let stand for five minutes and then add the remaining ingredients. Pour the wet mixture into the flour mixture and mix just until combined. Spoon into 16 paper muffin cups or greased tins. Bake at 375 for 20-25 minutes. Makes 16
