Introduction
Delicious--it's the only way I can get my husband to eat broccoli! Make sure you use a sweet onion--a regular onion is sometimes too powerful. Sometimes I also run the broccoli stalks through the food processor and add them at the last step. You can also add nuts if you want. Ingredients

3 bunches broccoli, florets removed
2 slices bacon, chopped
3/4 c. raisins
1/2 c. hulled sunflower seeds
1 small sweet onion, chopped fine
Dressing
6 Tablespoons rice wine vinegar
4 Teaspoons sugar
2 Teaspoons curry powder
1/4 Teaspoon kosher salt
4 Tablespoons extra virgin olive oil
Directions
Fill a pot with water and bring to boil. Prepare a separate bowl and fill with cold water and ice. When boiling, add broccoli florets. Boil broccoli for 1-2 minutes, and then use a slotted spoon to quickly transfer to cold water. Drain and chill.
Cook the chopped bacon in a skillet over medium-high heat. Drain on a paper towel and set aside.
Combine the dressing ingredients in a large bowl. Chop the chilled broccoli coarsely and add to the bowl along with the bacon, raisins, sunflower seeds and chopped onion. Mix thoroughly. Best if chilled for 1-2 hours before serving. Bon appetit!
