Introduction

This is a great summer side dish or lunch salad! This is a great summer side dish or lunch salad!
Number of Servings: 8

Ingredients

    1 1/4c Water
    1 c Uncooked couscous
    2 Tbsp fresh lime juice
    1 Tbsp honey
    1/2 tsp salt
    1/2 tsp ground cumin
    1/2 tsp ground corriander
    1 1/2 cups coarsely chopped nectarines
    1/2 cup coarsely shopped spinach
    1/4 cup chopped green onion
    1 15oz can chickpeas (garbanzo beans)

Directions

Boil water and stir in couscous. Cover and let stand 5 mins. Combine lime juice through corriander. Whisk. Add remaining ingredients and toss.

Makes 8, 1/2 cup servings.
