Ingredients

    1 tbsp canola oil
    5-6 medium summer squash, thinly sliced
    1 large onion diced, preferably Vidalia
    1 tbsp butter
    1/2 c parmesan cheese
    1 cup grated reduced fat sharp cheddar cheese
    1/2 c low fat sour cream
    1 sleeve (35) reduced fat crackers, crushed (recommended: Ritz)

Directions

Sautee the squash and onion in butter and canola oil until soft. Mix squash mixture with cheeses and sour cream, add salt and pepper to taste, then spread into a greased 2 quart casserole dish. Top with the crushed crackers and bake at 350 degrees for 20 minutes, or until golden brown.
