Taken directly from Healthy Cooking Magazine. Made this for a BBQ this weekend and it was SO YUMMY! One of my friends thought the watermelon was tomato, so it takes on a cucumber/tomato salad taste. Ingredients

    8 cups cubed seedless watermelon
    2 medium English cucumbers, halved lengthwise and sliced
    6 green onions, chopped
    1/4 cup minced fresh mint
    1/4 cup olive oil
    1/4 cup balsamic vinegar
    1/2 teaspoon salt
    1/2 teaspoon pepper

Directions

In a large bowl, combine the watermelon, cucumbers, onions and mint. In a small bowl, whisk the oil, vinegar, salt and pepper. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.

    I didn't have green onions so I used a little thinly sliced red onion and added cherry tomatoes and feta cheese. Also used balsamic vinegrette dressing. Yummy! - 9/22/14

    Made this for my dinner this evening with on-hand ingredients. One-fourth cup Vidalia onion in place of the green onion and regular cucumber, but OMG it was fantastic! Will be making this as often as possible. - 7/24/10
