Ingredients

    1/2 cup corn, fresh, canned, or frozen
    1 cup fresh green beans, snapped into bite-sized peices
    1/2 large, ripe tomato, diced
    1 tbsp cider vinegar
    1 tsp olive oil
    1 tsp fat-free mayonnaise
    1 tsp water
    dash of salt and pepper
    1/4 shallot, minced
    1 green onion, chopped
    1 tbsp fresh basil, chopped

Directions

Makes a dinner salad for one person.

Bring a pot of water to boil. Boil green beans 5 minutes. Add corn and continue to cook one minute. Drain and rinse under cold water to cool.

Combine remaining ingredients in a bowl. Add corn and beans. Let stand at room temperature 30 minutes to blend flavours.

Grilled, thinly sliced flank steak is a nice addition to this salad.
