Introduction

These excellent gluten free banana nut muffins have no added fat and are wonderfully low calorie! These excellent gluten free banana nut muffins have no added fat and are wonderfully low calorie!
Number of Servings: 12

Ingredients

    3 egg whites
    300g (3 med) very ripe bananas
    125ml (4oz) fat free vanilla or plain yoghurt
    150g (3/4 cup) gluten free self raising flour
    60ml (1/4 cup) maple syrup
    50g (1/2 cup) chopped pecans
    1/2 tsp baking powder
    1/2 tsp salt

Directions

Preheat oven to 180/350

1. Beat the egg whites until stiff in one bowl.
2. To another bowl, add the bananas and mash, and then add the carton of yoghurt and the maple syrup.
3. Whisk the banana, syrup and yoghurt together with an electric whisk until smooth and fluffy
4. Add flour, baking powder and salt to banana mixture and stir well.
5. Carefully fold egg whites into banana mixture.
6. Spoon into 12 lined muffin cups
7. Sprinkle chopped pecans onto each muffin
8. Bake for 20 minutes at 180/350
9. Cook on wire rack

NB These muffins freeze well. Each muffin has just under 122 calories, 3.3g fat (0.4g sat fat), 8.0g sugar, 1.3g fibre
