Ingredients

    1 T Olive Oil
    1 Cup chopped sweet onion
    1-2 Green onions sliced thin
    1 Cup bite size sliced carrot
    2 zucchini squash (about 2 cups)
    1/2 Cup sweet red bell pepper
    1 cooked chicken breast (bite size pieces)
    1/2 cup chunk pineapple
    2T Reduced sodium soy sauce
    1 tsp of honey
    1/2 tsp of ginger
    1/4 tsp garlic powder
    sprinkle of red cayenne pepper

Directions

Chop vegetables into bite size pieces. Heat olive oil in pan, then add onion, carrots and zucchini and stir until slightly cooked. Then add pepper, pineapple and chicken and cook for a minute or two to heat through. Add sauce, and sprinkle with the ground cayenne.
Serves 2.
