Introduction

Ingredients

    5 medium potatoes (to make 6 cups diced after boiling)
    3/4 large cucumber sliced to make one cup
    Baby Carrots (about 6) julienned to make 1/2 cup
    Celery sliced to make 1/2 cup. (about 1 stalk)
    Hard boiled eggs (3-4 large) to make 1 cup chopped
    Sweet pickle relish of your choice
    Mrs. Dash

Directions

The night before:
Peel and quarter about 5 medium potatoes and boil until tender. Refrigerate.

Cut up vegetables and put in large bowl.
Dice refrigerated potatoes (about 6 cups)
Add chopped eggs.

Mix 3/4 cup lite mayonnaise and pickle relish with 1/2 tbsp Mrs. Dash. Mix into vegetable ingredients. Top with Mrs. Dash to taste.

Makes about 8 1-cup servings.
