Introduction

Ingredients

    Spicy Italian Salmon Salad on Romaine Leaves, 1 serving (remove)
    Coconut Milk, 6 tbsp (remove)
    Broccoli, fresh, 170 grams (remove)
    Egg, fresh, 4 large (remove)
    Parmesan Cheese, grated, 1.5 oz (remove)
    Parsley, 28 grams (remove)
    Sour Cream, 6 tbsp (remove)
    Feta Cheese, 3 oz (remove)

Directions

Beat eggs, mix in cheeses, sour cream & coconut milk, then add veggies. Pour into small baking dish (I use an 8x4 and do it in the toaster oven!) that you have lined with parchment paper for ease of cleanup. Bake at 375 for close to an hour, checking periodically to make sure it is not getting dried out or burnt.

Make 6 decent portions.
