Ingredients

    1 lb. lean pork boneless cubed
    1 head radicchio greens, shredded
    a dozen miniature onions
    1/2 packet Lipton onion soup mix
    garlic scapes, chopped
    2 small fennel bulbs, chopped
    1 glass red wine
    mashed potatoes for four people

Directions

Cube pork, clean onions, shred greens, chop garlic scapes and fennel. Put all into crock pot. Sprinkle over soup mix, and add red wine. Mix. Cook on low for 8-10 hours. Serve over mashed potatoes. Serves 4.
